Red macarons: White chocolate peppermint ganache (100g white chocolate, 30ml heavy cream, 1/2 tsp peppermint extract)
Green macarons: Chocolate ganache (100g dark chocolate, 30ml heavy cream)
Beige macarons: Spiced buttercream (50g butter, 100g powdered sugar, 1 tsp cinnamon, 1/2 tsp nutmeg)

Prep the dry ingredients: Sift the almond flour and powdered sugar together into a bowl. You want to make sure they’re super fine and smooth to create that perfect macaron shell texture.
Whip up the meringue: In a separate clean, dry bowl, whip the egg whites on medium speed until they turn frothy. Gradually add the granulated sugar, increasing the speed to high, until stiff peaks form. When you lift the whisk, the peaks should stand tall without flopping over.
Add some festive color!: Gently fold the almond flour mixture into the meringue. This is where we separate the batter into three bowls to create red, green, and beige batches. Use a few drops of gel food coloring for the red and green batches. Fold until the batter forms a smooth ribbon when you lift the spatula – don’t overmix, or your macarons won’t rise properly!
Pipe those beauties: Transfer the batter to piping bags and pipe small circles (about the size of a 50p coin) onto a baking sheet lined with parchment paper. Leave some space between them, as they’ll spread a bit.

Prepare the fillings:
For the peppermint white chocolate ganache: Heat the cream until it just begins to simmer, then pour it over the white chocolate. Stir until smooth, then add the peppermint extract.
For the chocolate ganache: Same process as above, but with dark chocolate – easy peasy!
For the spiced buttercream: Beat the butter until creamy, then gradually add the powdered sugar, cinnamon, and nutmeg. Mix until fluffy and spiced to perfection!
Assemble the macarons: Pair up the macaron shells by size, pipe your fillings onto one shell, and gently sandwich with the other. Try not to eat them all right away – they get even better after maturing in the fridge for 24 hours!
